Cashew Pesto

Make this cashew pesto the star in your kitchen. Use it in pasta, spread over sandwiches or simply enjoy with soft cheeses like camembert or brie

Ingredients

2 cups Basil Leaves
1/2 cup Raw Cashews
1/2 cup Grated Parmesan
1 Garlic Clove, chopped
1/4 cup Lime Juice
1/2 cup Extra Virgin Olive Oil

Method

  1. Place basil, cashews, parmesan, garlic and lime juice in a food processor. Pulse until chopped. With motor running, gradually add oil. Process until well combined.
  2. Place in an airtight container and refrigerate for up to 4 days.
