This easy recipe makes a yummy snack with only six ingredients!
60 g butter or margarine
125 ml (½ cup) light brown sugar
30 ml (2 Tbsp) syrup or honey
1 ml (pinch) bicarbonate of soda
6 x 250 ml (6 cups) popped popcorn
200 g Safari natural almonds, coarsely chopped
Preheat oven to 180 °C. Line a large oven roasting pan with thick baking paper and grease lightly.
Combine butter, sugar and syrup in a medium, heavy-based saucepan. Stir until sugar has dissolved. Simmer mixture for 3 – 5 minutes. Remove from heat, add bicarbonate of soda and stir well (mixture will become foamy).
Add popcorn and nuts to the saucepan and stir through caramel until evenly coated. Spoon into roasting pan and spread popcorn mixture out evenly.
Bake in the preheated oven for 15 – 20 minutes. Check regularly, and stir, as the caramel can burn easily. Leave to cool. It will become crisp as it cools. Store in an airtight container.
