Spicy Fruit Crumble
The delicious combination of soft fruit with crisp crumble makes this an ideal option for dessert or even breakfast.
500 g Safari mixed fruit salad
500 ml (2 cups) fresh orange juice
5 ml (1 tsp) grated lemon rind
60 ml (¼ cup) lemon juice
60 ml (¼ cup) sugar
2 sticks cinnamon
1 ml (pinch) ground cloves
2 ml (½ tsp) ground all spice
60 g cold butter, grated
125 ml (½ cup) cake flour
60 ml (¼ cup) caramel brown sugar
10 ml (2 tsp) ground cinnamon
125 ml (½ cup) muesli of choice
1. Place the fruit in a medium heavy-based saucepan. Add the orange juice, lemon rind and juice, sugar, cinnamon, cloves and all spice. Bring to the boil, reduce and simmer for about 8 minutes until the fruit is soft and the sauce has reduced slightly.
2. Transfer the fruit with some remaining sauce into a greased medium ovenproof dish. Remove the cinnamon stick.
3. Crumble: Rub the butter into the flour. Add the sugar, cinnamon and muesli and rub further until it resembles coarse breadcrumbs. Top the fruit with the crumble mixture.
4. Bake in a preheated oven at 180 °C for 20 – 30 minutes or until the crumble is cooked and golden brown. Serve with plain yoghurt or vanilla custard.
