Wheat Salad with Peaches and Raisins
200 ml (¾ cup) whole wheat kernels
60 g Safari dried peaches
60 ml orange juice
80 ml Safari seedless raisins
125 ml creamy mayonnaise
15 ml medium curry powder
45 ml fruit chutney
about 10 ml fresh lemon juice
Soak wheat overnight. Cover with water and cook until soft. (1 -2 hours depending on the wheat). Leave to cool.
Soak the peaches in the orange juice for about 2 hours until soft. Discard the liquid and chop the peaches into small pieces.
Add the remaining ingredients to the cooked wheat and mix well. Serve as a side salad with cold meat cuts or with a braai.
