100 g Moir's GlacÚ Cherries, finely chopped
280 g Safari Dates, finely chopped
200 g Safari Selected Raw Cashew Nuts, finely chopped
100 g Safari Natural Almonds, finely chopped
125 ml cocoa powder
125 ml unsweetened shredded coconut
30 ml vanilla extract
45 ml cold water
100 g white chocolate, melted
Line a 29 x 12 cm loaf pan with aluminium foil.
Place all the ingredients in a large bowl and mix by hand. Tip the mixture into the prepared loaf pan, and flatten the mixture, using your hand. Place in the fridge for 1 hour to set.
Remove from the fridge, using the foil, lift the mixture out of the pan, place on a cutting board and slice into bars. Dip each bar into the melted chocolate and place on a baking sheet lined with baking paper to allow the chocolate to set.
Store in an airtight container in a cool place.
