Brandy Tart

Ingredients
- 250 ml SAFARI Pitted Dates or Prunes
- 415 ml SAFARI Seedless Raisins or Sultanas
- 250 ml SAFARI Walnuts, chopped
- 500 ml SASKO cake flour
- 5 ml MOIR'S baking powder
- 5 ml bicarbonate of soda
- 250 ml boiling water
- 250 ml sugar
- 1 beaten egg
- 2 ml salt
- 125 ml cherries
Sauce
- 435 ml sugar
- 250 ml water
- 15 ml butter
- 60 ml brandy
Method
- Cut up dates (or prunes), add bicarbonate of soda and pour hot water over it. Allow to cool. Add sugar, egg and salt. Add dry ingredients, fruit and nuts.
- Bake for 20 – 30 minutes at 180° C.
- For the sauce, boil together sugar, water and butter. Add brandy and pour over the tart.
- Serve with whipped cream.
