Brandy Tart

Ingredients

  • 250 ml SAFARI Pitted Dates or Prunes
  • 415 ml SAFARI Seedless Raisins or Sultanas
  • 250 ml SAFARI Walnuts, chopped
  • 500 ml SASKO cake flour
  • 5 ml MOIR'S baking powder
  • 5 ml bicarbonate of soda
  • 250 ml boiling water
  • 250 ml sugar
  • 1 beaten egg
  • 2 ml salt
  • 125 ml cherries

Sauce

  • 435 ml sugar
  • 250 ml water
  • 15 ml butter
  • 60 ml brandy

Method

  1. Cut up dates (or prunes), add bicarbonate of soda and pour hot water over it. Allow to cool. Add sugar, egg and salt. Add dry ingredients, fruit and nuts.
  2. Bake for 20 – 30 minutes at 180° C.
  3. For the sauce, boil together sugar, water and butter. Add brandy and pour over the tart.
  4. Serve with whipped cream.
