Brown Rice with Dried Fruit Nuggets
- 125 ml SAFARI Raisins and Cranberries
- 125 ml SAFARI Dried Pears - Cut into thin slivers
- 250 ml Brown & Wild Rice
- 750 ml water
- 3 ml salt
- a handful fresh mint - chopped
- zest of 1 lemon
- Cook the rice according to the packet instructions and cool.
- Add the chopped fruit, lemon zest and mint and mix.
- Serve either hot or cold with the Fruity Lamb Pinwheels.
