This Barking Up the Fruit Tree frozen yoghurt bark is a refreshing, easy treat that blends creamy yoghurt with crunchy toasted almonds and sweet fruit flakes. A drizzle of white chocolate adds a touch of indulgence to every bite.
This no-bake recipe is perfect for warm days or quick desserts, requiring minimal prep and a few wholesome ingredients. After freezing, the bark snaps into irresistible shards that are ideal for sharing or enjoying straight from the freezer. It is a versatile base you can customise with extra toppings while keeping the same creamy, crunchy contrast throughout.
½ cup (50g) Safari Flaked Almonds
2 cups (500g) plain yoghurt
½ cup (70g) Safari Fruit Flakes
¼ cup (60g) white chocolate, melted
Heat a dry pan over medium heat and add the Safari Flaked Almonds. Toast for 3–5 minutes, stirring often, until they turn golden brown and smell nutty and fragrant. Set aside to cool.
Line a baking tray or shallow dish with baking paper. Spoon in the yoghurt and spread it out to about 1 cm thick.
Scatter the Safari Fruit Flakes and cooled toasted Safari Flaked Almonds over the yoghurt.
Take the melted white chocolate and drizzle it over the yoghurt and toppings using a fork or spoon.
Place the tray in the freezer for at least 3 hours, or overnight for a firmer set.
Once set, lift the bark from the tray using the baking paper and break or cut into shards or squares.
Serve immediately, or store in an airtight container in the freezer. ENJOY!
